Two new Springfield restaurants prepping to open

Two more restaurants that previously announced plans to open new sites in Springfield are still working to get ready.

Dip Tacos, a food truck that said months ago it would open a brick-and-mortar site, has updated its followers via social media about its progress.

Also, Bourbon Street Cafe and Grill put a sign up recently to announce it would open on South Limestone Street, a move in the works since 2020.

Dip Tacos food truck owner, Holly Kante, announced in February the plan to open Dip Tacos, a sit-down restaurant at 1532 Mitchell Blvd. The site formerly housed Pearl’s Passions, which closed after about five years.

Kante had initially planned to open by June, and she sold the food truck to purchase the restaurant contents.

“I’ve been working on it little by little myself,” she said, paying the monthly rent by doing Instacart and DoorDash.

She said she is certified as a woman-owned business through the state now.

Kante launched a GoFundMe campaign to try to get the remaining work done that will allow her to open. That includes refrigeration equipment and some electrical work.

Dip Tacos will offer a menu focused on birria food, both beef and chicken style, in tacos, burritos, quesadillas and other specialty offerings like pizza and ramen.

Birria is traced to Jalisco, Mexico, and the meat is cooked low and slow for the best results with a consommé for dipping.

Bourbon Street Cafe and Grille announced three years ago that it would expand from Dayton and open a Springfield location. A site at at 2012 South Limestone St. — home previously to check cashing businesses and a Rax restaurant — was chosen.

Delays ensued, in part because of COVID-19 and permits, but recently the owners had a sign installed that said it was opening soon.

The Brown Street Dayton location’s menu includes the restaurant’s signature bourbon chicken, blackened chicken, salmon or sea bass, wraps, burritos, burgers, gyros, salads, and sides that include green beans, Cajun potatoes, steamed vegetables and pinto beans and rice.
